Ways to Consume Yerba Mate

A refreshing traditional drink from Paraguay. It is prepared by placing some yerba mate in a small container, pouring small amounts of very cold water, which is then sipped through a bombilla. Tereré can be enjoyed year-round and is a local custom to share the same preparation in a circle with friends. It is often enhanced with a blend of medicinal herbs like mint or lemon verbena.

One of the most common ways to drink yerba mate. It is prepared in a container also called mate, where hot water (between 70 and 80°C) is poured and sipped through a bombilla. Medicinal herbs can also be added.

A typical way to prepare mate cocido in Paraguay is to place a good amount of yerba mate (3/4) in a heat-resistant container and add a smaller portion of sugar (approx. 1/4). Add some embers of burning wood to the surface so that they burn the sugar, immediately sprinkle the mixture over the ember, covering it until the mixture is toasted and has the typical aroma of smoked yerba. Pour the mixture into a pot of boiling water and stir until it reaches a boil again. Once ready, strain, let rest for a few minutes, and serve hot as an infusion for breakfast or snacks. There are also variations for preparing it without charcoal or sugar.

Same preparation as mate cocido, but can be served mixed with some milk to taste.

Heat water first, add yerba mate before it boils, and later strain to serve in a cup. It is also called mate, where hot water is poured, and it is sipped through a bombilla.

Prepare an infusion of yerba mate and let it cool. Mix the well-chilled infusion with lemon juice or other citrus and sweeten to taste. It can be combined with a touch of aromatic herbs of your choice, like mint, etc.

*Sapecado:  It refers to the rapid exposure of the yerba mate leaves to heat to stop oxidation and preserve their color and flavor.
